  • 1 lb ground beef Quality ground beef recommended
  • 2 cups diced potatoes Add more if you like a thicker soup
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth Use low-sodium if preferred
  • 1 can diced tomatoes 14.5 oz can
  • 1 cup corn kernels
  • 1 tsp Italian seasoning Adjust to taste
  • Salt and pepper To taste
  • 2 tbsp fresh parsley, chopped For garnish

  • Brown the ground beef in a large pot over medium heat, draining excess fat.
  • Add the chopped onion, minced garlic, carrots, and celery. Sauté for about 5 minutes until vegetables are tender.
  • Stir in the diced tomatoes, diced potatoes, and corn kernels.
  • Pour in the beef broth and add Italian seasoning, salt, and pepper.
  • Bring the mixture to a gentle boil, then reduce heat and let it simmer for 25 to 30 minutes until potatoes are tender.
  • Adjust the seasoning if needed before serving.
  • Garnish each serving with freshly chopped parsley before serving.

Notes

Serve with crusty bread, crackers, or a garden salad. For a twist, consider adding bell peppers or zucchini. Adjust spices to your taste, and a squeeze of lemon juice brightens the flavor.
