Ingredients
  

For the chicken

  • 1 lb boneless, skinless chicken thighs or breasts Choose thighs for juicier results.
  • 2 tbsp olive oil
  • 2 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • to taste Salt and pepper Adjust according to preference.
  • 1 cup cooked rice, quinoa, or your favorite grain (optional) Use as a base.
  • 1 cup cherry tomatoes, halved
  • 1 whole cucumber, diced
  • 1/2 whole red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped

For the tzatziki sauce

  • 1 cup Greek yogurt
  • 1/2 whole cucumber, grated and squeezed Ensure it's squeezed dry to avoid wateriness.
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill or mint (optional) Choose according to preference.
  • to taste Salt and pepper Season to taste.

Instructions
 

Preparation

  • In a medium-sized bowl, combine olive oil, dried oregano, garlic powder, onion powder, salt, and pepper to create the marinade.
  • Add the chicken to the marinade and coat it well. For optimal flavor, let it marinate for at least 30 minutes, or up to 4 hours if time allows.
  • In another bowl, combine Greek yogurt, grated cucumber, minced garlic, and lemon juice. Add dill or mint if desired, and season with salt and pepper. Cover and refrigerate.

Cooking

  • Heat a skillet or grill over medium-high heat.
  • Cook the marinated chicken for 6 to 8 minutes on each side, or until cooked through and reaches an internal temperature of 165°F.
  • Once cooked, remove from heat, let it rest briefly, and slice into bite-sized pieces.

Assembly

  • Layer rice or quinoa at the bottom of each bowl.
  • Top with sliced chicken, halved cherry tomatoes, diced cucumber, and thinly sliced red onion.
  • Finish with a dollop of tzatziki sauce and a sprinkle of chopped parsley.

Notes

For freshness, store components separately if you have leftovers. For a unique twist, experiment with different grains or vegetable toppings like roasted bell peppers or olives.
