  • 2 cups cooked shredded chicken Can use rotisserie chicken for convenience.
  • 1 can black beans Drained and rinsed.
  • 1 cup corn Can use frozen or canned.
  • 1 cup cooked brown rice Can substitute with quinoa or cauliflower rice.
  • 1 cup diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 2 cups shredded cheese Your choice of cheese, such as cheddar or Monterey Jack.
  • 1 cup diced bell peppers Any color works.
  • 1/2 cup diced onion
  • to taste salt and pepper
  • Tortilla chips Optional for topping.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, combine the shredded chicken, black beans, corn, cooked brown rice, diced tomatoes with green chilies, taco seasoning, diced bell peppers, and diced onion. Stir until well mixed.
  • Spread the mixture evenly in a greased 9x13 inch baking dish.
  • Sprinkle shredded cheese over the top.

Baking

  • Bake in the preheated oven for 25-30 minutes until the cheese is melted and bubbling.

Serving

  • Let the casserole sit for a few minutes before serving. Optionally, top with tortilla chips.

Notes

Consider adding toppings like guacamole, tomato salsa, Greek yogurt, or fresh cilantro for added flavor. This dish is highly customizable with variations to suit personal preferences.
