Preparation

  • Start by washing and slicing your zucchinis, bell pepper, and broccoli into bite-sized pieces.

Cooking

  • Place a large skillet or wok over medium-high heat. Add in the olive oil and let it heat up for about a minute.
  • Once the oil is hot, add the ground chicken. Use a spatula to break it apart as it cooks, ensuring it browns evenly for about 5-7 minutes until it’s fully cooked.
  • Toss in minced garlic, ginger, and the sliced vegetables. Stir everything together and cook for an additional 5-6 minutes, or until the zucchini becomes tender but still crisp.
  • Pour the soy sauce over the chicken and vegetables. Stir well to ensure everything is coated in the sauce. Season with salt and pepper based on your taste.
  • Let it all simmer for another 2-3 minutes to meld the flavors, ensuring the vegetables retain their vibrant color and crunch.

Serving

  • Serve the stir fry over a warm bed of cooked rice or quinoa, or enjoy it in lettuce wraps.

Notes

Don't overcook the vegetables to keep them crisp. Use fresh ingredients for the best flavor. You can adjust the soy sauce and spices to your liking.
