Soup Base

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Main Ingredients

  • 4 cups chicken broth
  • 1 pound shredded cooked chicken Fresh or roasted chicken recommended.
  • 1 package (16 oz) gnocchi
  • 1 cup heavy cream For a richer texture.
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions
 

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the diced onion, carrots, and celery. Cook until softened, about 5 minutes.
  • Stir in the minced garlic, dried thyme, and dried rosemary, and cook for another minute.

Cooking

  • Pour in the chicken broth and bring to a gentle simmer.
  • Add the shredded cooked chicken and gnocchi. Cook until gnocchi float to the top, about 3 to 5 minutes.
  • Stir in the heavy cream and season with salt and pepper.
  • Allow the soup to heat through for another 2 to 3 minutes without boiling.
  • Serve hot, garnishing with freshly chopped parsley.

Notes

Use fresh herbs for enhanced flavor. Adjust thickness by adding cream or cornstarch slurry. Serve with crusty bread or garlic knots.
