  • 1 large egg
  • 1/2 teaspoon salt
  • as needed water Add gradually to form a dough

For the Chili Sauce

  • 2 tablespoons olive oil For cooking the sauce
  • 1/2 cup chili sauce Adjust for desired spice level
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper

Instructions

Prepare the Noodles

  • Combine the all-purpose flour and salt in a mixing bowl. Create a well in the center and crack the egg into it.
  • Gradually add small amounts of water, mixing until a cohesive dough forms. Aim for a smooth, slightly sticky texture.
  • Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth.
  • Wrap the dough in plastic wrap or cover it with a clean towel and let it rest for at least 30 minutes.
  • Roll the rested dough on a floured surface until thin, then slice it into your desired noodle width.

Cook the Noodles

  • Bring a pot of salted water to a boil and carefully add the freshly cut noodles.
  • Cook them for 3-5 minutes or until they reach an al dente texture, then drain thoroughly.

Make the Chili Sauce

  • In a large skillet, heat the olive oil over medium heat.
  • Add the chili sauce, garlic powder, onion powder, salt, and pepper. Simmer for several minutes until the sauce thickens.

Combine and Serve

  • Add the cooked noodles to the skillet and toss gently to coat them evenly with the chili sauce.
  • Serve hot, optionally garnished with fresh herbs, crushed peanuts, sesame seeds, or green onions.

Notes

Adjust the spice level to your preference. Store leftovers separately in airtight containers. The noodles keep for up to three days in the refrigerator, while the chili sauce can last about a week.
