Ingredients
  

Chicken and Broth Ingredients

  • 1 rotisserie chicken shredded
  • 4 cups chicken broth

Vegetable Ingredients

  • 8 oz mushrooms sliced
  • 1 onion diced
  • 2 carrots diced
  • 2 stalks celery diced
  • 2 cloves garlic minced
  • 1 tsp thyme

Cream Base

  • 1 cup heavy cream
  • 2 tbsp olive oil for sautéing

Instructions
 

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the diced onion, carrots, and celery, sautéing for 5 to 7 minutes until softened.
  • Stir in the minced garlic and sliced mushrooms, cooking for an additional 4 to 5 minutes.

Cooking

  • Add the shredded rotisserie chicken, chicken broth, thyme, salt, and pepper to the pot.
  • Stir well and bring to a gentle boil, then reduce the heat and let it simmer for 15 minutes.
  • After simmering, add the heavy cream and stir, then simmer for an additional 5 minutes.

Serving

  • Garnish with fresh herbs and serve warm.

Notes

You can customize the veggies, use different types of mushrooms, or make it lighter by substituting the cream.
