  • 1 lb chicken breast, diced Use boneless, skinless chicken breasts.
  • 1/4 cup honey Adjust sweetness to taste.
  • 1/4 cup BBQ sauce Choose your favorite BBQ sauce.
  • 1 tablespoon olive oil For cooking the chicken.
  • 1 cup mixed vegetables (like bell peppers and broccoli) Use fresh or frozen as per preference.
  • to taste Salt and pepper For seasoning.
  • Chopped green onions For garnish.

Instructions
 

Preparation

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  • Add the diced chicken to the skillet, and sprinkle with salt and pepper.

Cooking

  • Cook the chicken for about 7-10 minutes until golden brown and fully cooked.
  • Stir in 1/4 cup of honey and 1/4 cup of BBQ sauce, mixing thoroughly.
  • Cook for another 2-3 minutes until the chicken is warmed through.
  • Steam the mixed vegetables in another pot for 4-5 minutes until tender but crisp.

Assembly

  • Scoop 1 cup of cooked rice into a bowl.
  • Add the honey BBQ chicken mixture on top.
  • Top with steamed mixed vegetables and garnish with chopped green onions.

Notes

Customize with your favorite vegetables and consider adding sesame seeds or chopped cilantro as garnishes.
