Ingredients
  

Dry Ingredients

  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Wet Ingredients

  • 1/2 cup buttermilk
  • 1/2 cup unsalted butter, melted and cooled
  • 2 tablespoons honey
  • 2 large eggs

Additions

  • 1 cup sweet corn kernels (fresh, canned, or frozen)
  • Oil for frying Use enough oil to fill your frying pan at least 2 inches deep.

Preparation

  • In a large mixing bowl, whisk together cornmeal, all-purpose flour, granulated sugar, baking powder, baking soda, and salt.
  • In a separate bowl, whisk together buttermilk, melted butter, honey, and eggs until smooth.
  • Pour the wet mixture into the bowl with the dry ingredients and stir gently until just combined; the batter should be slightly lumpy.
  • Fold in the sweet corn kernels until evenly distributed.

Frying

  • Heat oil in a deep frying pan over medium-high heat until it reaches 350°F (175°C).
  • Using a tablespoon, scoop the cornbread batter and drop it into the hot oil, frying in batches to avoid overcrowding.
  • Fry the poppers for about 3-4 minutes on each side or until golden brown and crispy.
  • Remove the cooked poppers from the oil using a slotted spoon and drain on paper towels.

Notes

Drizzle additional honey on top before serving for extra sweetness. Serve warm as a snack or side dish.
