Ingredients
  

For the Marinade

  • 1/4 cup honey
  • 2 limes Juice of 2 limes
  • 1 tablespoon lime zest of 1 lime
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • Salt and pepper to taste Season to preference

For the Rice and Toppings

  • 1 cup jasmine rice
  • 2 cups chicken broth Can substitute with vegetable broth or water
  • 1 avocado diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon olive oil For the avocado mixture
  • Lime wedges, for serving

For the Chicken

  • 2 boneless skinless chicken breasts Grilled

Instructions
 

Preparation of Marinade

  • In a mixing bowl, combine honey, lime juice, lime zest, minced garlic, ground cumin, salt, and pepper to create the marinade.
  • Place the chicken breasts in a resealable bag or shallow dish and pour the marinade over the chicken, ensuring it is well-coated.
  • Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.

Cooking the Rice

  • Rinse jasmine rice under cold water until the water runs clear.
  • In a medium saucepan, bring chicken broth to a boil, then add the rinsed rice, cover, and reduce heat to a simmer.
  • Cook rice for about 15 minutes, or until tender and liquid is absorbed.

Grilling Chicken

  • Preheat grill or stovetop grill pan over medium-high heat.
  • Remove chicken from marinade and allow excess liquid to drip off. Place on the grill.
  • Cook chicken for 6-7 minutes on each side, or until it reaches an internal temperature of 165°F (75°C).
  • Let the chicken rest for a few minutes before slicing into strips.

Preparing Avocado Mixture

  • In a bowl, combine diced avocado, finely chopped red onion, cilantro, and olive oil, mixing gently to keep the avocado chunky.

Assembly

  • Start with a generous serving of jasmine rice at the base of the plate.
  • Layer sliced grilled chicken over rice, followed by the avocado mixture.
  • Garnish with lime wedges and extra cilantro if desired.

Notes

For optimal flavor, marinate the chicken for at least 1 hour. Serve with lime wedges and additional cilantro for extra flavor.
