  • 1 cup walnuts Consider lightly toasting before use for extra flavor.
  • 1/2 cup mayonnaise Creamy texture that ties the dish together.
  • 1/4 cup honey Adds sweetness to the sauce.
  • 1 tablespoon lime juice Provides tanginess.
  • 1/4 cup cornstarch To coat the shrimp for frying.
  • 2 cups vegetable oil (for frying) Ensure the oil is hot enough before frying.
  • to taste Salt and pepper For seasoning the shrimp.

Instructions
 

Preparation

  • Bring a pot of water to a boil and add the walnuts for 1-2 minutes. Drain and allow to dry.
  • Heat vegetable oil in a deep pan or skillet over medium-high heat.
  • Coat the peeled and deveined shrimp in cornstarch.

Cooking

  • Carefully add the coated shrimp to the hot oil, frying in batches if necessary, for about 3-4 minutes or until golden brown.
  • Remove the shrimp from the oil and drain on paper towels.

Sauce Preparation

  • In a bowl, combine mayonnaise, honey, and lime juice to create the sauce.

Finishing

  • Toss the fried shrimp in the sauce until well coated, then mix in the candied walnuts.
  • Serve immediately while warm and crispy.

Notes

Serve garnished with fresh cilantro or lime slices. Pairs well with jasmine rice or a fresh salad. Can also be served with crispy wontons or spring rolls for a complete meal.
