  • 2 pieces Honeycrisp apples, sliced
  • 4 cups mixed greens washed and dried
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup walnuts, chopped (optional) adds crunch and healthy fats
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup balsamic vinaigrette or your choice of light vinaigrette adjust to taste

Preparation

  • Wash the mixed greens thoroughly under cool water and dry them using a salad spinner or clean kitchen towel.
  • Slice the Honeycrisp apples into thin wedges and place them in a large bowl.
  • Crumble the feta cheese over the apple slices in the bowl.
  • If using, chop the walnuts into smaller pieces and add them to the bowl.
  • Add the thinly sliced red onion to the mixture.
  • Drizzle the balsamic vinaigrette over the top of the ingredients, starting with a smaller amount.
  • Gently toss all the ingredients using salad tongs or a large spoon, ensuring not to mash them.
  • Serve the salad immediately for the best texture and flavor.

Notes

For variety, consider adding additional ingredients like dried cranberries or a squeeze of lemon juice to balance flavors. Store leftovers in an airtight container for up to three days.
