  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs Room temperature.
  • 2 teaspoons vanilla extract

Dry Ingredients

  • 3 cups all-purpose flour
  • 1 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Mix-ins

  • 1 cup chocolate chips High-quality chips recommended.
  • 1 cup mini marshmallows
  • 1/2 cup crushed peppermint

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract.

Mixing

  • In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  • Gradually mix the dry ingredients into the wet ingredients until just combined.
  • Gently fold in the chocolate chips, mini marshmallows, and crushed peppermint.

Baking

  • Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper, ensuring they are spaced apart.
  • Bake for 10-12 minutes. The cookies should be soft in the center.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

For best results, make sure all ingredients are at room temperature. Consider chilling the dough for 30 minutes if it feels too soft before baking.
