Hot Honey BBQ Chicken Quesadillas

Quesadilla Filling

  • 2 cups cooked chicken, shredded Use leftover chicken for convenience.
  • 1 cup barbecue sauce Choose your favorite brand.
  • 1/4 cup honey Adjust based on sweetness preference.
  • 2 cups shredded cheese Cheddar or a cheese blend recommended.
  • 4 large flour tortillas Use whole wheat for a healthier option.
  • 1 tablespoon olive oil For cooking the quesadillas.
  • 1/2 cup chopped onions Optional for added flavor.
  • 1/2 cup sweet corn Optional for extra texture.
  • 1/4 cup chopped cilantro For garnish, optional.
  • 1 serving Sour cream Optional for serving.
  • 1 serving Fresh lime wedges Optional for serving.

Instructions
 

Preparation

  • Start by mixing the cooked shredded chicken, barbecue sauce, and honey in a bowl. Stir until the chicken is well-coated and the flavors combine.
  • Heat a large skillet over medium heat and add a splash of olive oil to lightly coat the pan.

Cooking Quesadillas

  • Place one flour tortilla in the skillet. Sprinkle half of the shredded cheese evenly over the tortilla.
  • Spoon half of the chicken mixture over the cheese. If using, add onions and corn on top for added texture and flavor.
  • Sprinkle the remaining cheese over the chicken mixture and fold the tortilla in half.
  • Cook for about 3-4 minutes until the bottom is golden and the cheese begins to melt.
  • Carefully flip the quesadilla and cook the other side for another 3-4 minutes until it is golden brown and crispy.
  • Remove the quesadilla from the skillet and let it cool slightly before slicing it into wedges.
  • Repeat the process with the second tortilla.

Serving

  • Serve warm with chopped cilantro, sour cream, and lime wedges if desired.

Notes

For variations, use different proteins or vegetables. You can also experiment with different cheeses for unique flavors. Allow quesadillas to cool before slicing for neat wedges. Store leftovers in an airtight container.
