Ingredients
  

For the Cake

  • 1 cup unsalted butter, softened Should be at room temperature
  • 2 cups granulated sugar
  • 4 large eggs
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 cup rainbow sprinkles Add gently to prevent breakage

For the Ice Cream Layer

  • 1 quart ice cream (flavor of your choice) Should be slightly softened for easy spreading

For the Ganache

  • 1 cup heavy cream To be heated
  • 1 cup chocolate chips

Preparation

  • Preheat your oven to 350°F (175°C) and grease a loaf pan.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
  • Add the eggs one at a time, mixing well after each addition.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry mixture to the creamed mixture, alternating with the milk, until fully combined.
  • Fold in the rainbow sprinkles gently.

Assembly and Baking

  • Pour half of the batter into the prepared loaf pan, smoothing it into an even layer.
  • Layer the ice cream over the batter, then cover with the remaining batter and spread it evenly.
  • Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the cake to cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.

Ganache Preparation

  • In a saucepan, heat the heavy cream until it just begins to simmer.
  • Remove from heat and stir in the chocolate chips until smooth and glossy.
  • Pour the ganache over the cooled cake and let it drip down the sides.

Serving

  • Chill the cake in the refrigerator before slicing. Serve each slice garnished with additional sprinkles or whipped cream if desired.

Notes

Customize with different ice cream flavors or add-ins like crushed cookies or chopped nuts. Store in an airtight container or freeze individual slices wrapped in plastic.
