Ingredients
  

For the cookies

  • 1 cup unsalted butter, softened Make sure it's at room temperature.
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup heavy cream To be heated for the topping.
  • ¼ cup granulated sugar for topping For caramelizing.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, cream the softened butter and sugar together until light and fluffy.
  • Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Scoop out tablespoon-sized portions of dough and roll them into balls. Place the dough balls on the prepared baking sheet, leaving space between each cookie.
  • Flatten each dough ball slightly with your palm.

Baking

  • Bake in the preheated oven for 10 to 12 minutes until the cookies are lightly golden around the edges but still soft in the center.
  • Remove from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Caramelizing

  • While the cookies cool, prepare the topping by heating the heavy cream in a saucepan until just warm. Take it off the heat and let it cool for a few minutes.
  • Once the cookies are completely cooled, use a kitchen torch to slowly caramelize the top of each cookie with a sprinkle of granulated sugar. Aim for a golden, crispy layer.
  • Allow the cookies to cool for a few minutes after caramelizing before serving.

Notes

For best results, make sure your butter is fully softened, mix dry ingredients until just combined, and keep an eye on baking time to maintain a soft center.
