Ingredients
  

For the cookie layers

  • 1 cup unsalted butter, softened Make sure it is softened but not melted.
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 2 cups all-purpose flour Sift before adding.
  • 1/4 teaspoon salt
  • 1/2 cup raspberry jam Spread over the first layer.
  • 1/2 cup apricot jam Spread over the second layer.
  • 1 cup dark chocolate, chopped For topping.
  • 1 tablespoon vegetable oil To mix with chocolate.
  • to taste colored sprinkles Optional for decoration.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  • Add the eggs one at a time, mixing thoroughly after each addition, then incorporate the vanilla and almond extracts.
  • Gradually sift in the flour and salt, mixing gently until just combined.
  • Divide the dough into three bowls. Color one portion red, one green, and leave one plain.

Baking Layers

  • Spread the red dough evenly in the prepared pan and bake for 10-12 minutes, until the edges turn golden. Cool and spread raspberry jam on top.
  • Spread the green dough evenly over the raspberry jam and bake for another 10-12 minutes. Once cooled, spread apricot jam over the green layer.
  • Spread the plain dough over the apricot jam and bake for an additional 10-12 minutes.

Topping and Serving

  • Melt the dark chocolate with the vegetable oil until smooth, then drizzle over the assembled cookie stack.
  • Let the chocolate set, then cut the cookie stack into bars or squares. Arrange on a serving platter.

Notes

Store in an airtight container for up to a week, or freeze for up to three months. Allow to thaw at room temperature before serving. To enhance flavors, consider using different extracts or jams.
