  • 8 ounces pasta (such as penne or rigatoni) Cook according to package instructions until al dente

For the Sauce

  • 1 pound Italian sausage (sweet or spicy, your choice) Crumble it while cooking
  • 2 medium sweet peppers (red, yellow, or green), sliced
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 1 teaspoon Italian herbs (such as basil, oregano, thyme)
  • 2 tablespoons olive oil For sautéing
  • Salt to taste
  • Pepper to taste

Preparation

  • Heat a large skillet over medium heat and add the olive oil.
  • Crumble the Italian sausage into the skillet and cook, breaking it apart with a spatula, until browned (about 5 to 7 minutes).
  • Add the chopped onions, minced garlic, and sliced sweet peppers to the skillet and stir everything together. Cook for another 5 to 7 minutes until the vegetables are tender.
  • Pour in the crushed tomatoes and add the Italian herbs. Stir to combine and let simmer for about 10 minutes.
  • While the sauce simmers, cook the pasta in a large pot of boiling salted water until al dente, then drain.
  • Add the drained pasta to the skillet with the sausage and peppers mixture, tossing until the pasta is evenly coated with the sauce. Adjust seasoning with salt and pepper if needed.
  • Serve the pasta hot in bowls or on plates.

Notes

For a garnish, consider fresh herbs like basil or parsley. Pair with garlic bread and a light salad for a complete meal. Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
