Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion, diced carrots, and diced celery; sauté for about 5 to 7 minutes until soft.
  • Stir in minced garlic and cook for an additional minute.
  • Pour in chicken broth and bring to a boil.
  • Add small pasta and cook according to package instructions until al dente.

Making the Meatballs

  • In a mixing bowl, combine ground meat, grated Parmesan cheese, breadcrumbs, and beaten egg.
  • Mix until well combined and form into small meatballs, around 1 inch in size.

Cooking and Finishing

  • Once the pasta is cooked, drop the meatballs into the boiling broth.
  • Cook meatballs in the broth for about 10 minutes.
  • Stir in chopped spinach or escarole and Italian seasoning; season with salt and pepper to taste.
  • Simmer for another 2 to 3 minutes until greens are wilted.
  • Serve hot with a sprinkle of extra Parmesan cheese on top.
