  • 1 1/4 teaspoons baking soda
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons coarse salt

Wet Ingredients

  • 1 1/4 cups salted butter, softened About 2 1/2 sticks
  • 1 1/4 cups light brown sugar
  • 1 cup plus 2 tablespoons granulated sugar About 227g or 8 ounces
  • 2 large eggs
  • 2 teaspoons pure vanilla extract

Chocolate

  • 1 1/4 pounds bittersweet chocolate At least 60%, about 680g
  • 8 ounces chopped additional dark chocolate Optional for coating

Instructions
 

Preparation

  • Gather all your ingredients and ensure they are at room temperature.
  • In a stand mixer, combine softened butter with light brown sugar and granulated sugar.
  • Beat together until creamy and light in texture, about 3 to 5 minutes.
  • Add the eggs one at a time, mixing well after each addition. Scrape down the sides of the bowl.
  • Stir in the pure vanilla extract.
  • In a separate bowl, whisk together cake flour, bread flour, baking soda, baking powder, and coarse salt.
  • Gradually incorporate the dry ingredients into the wet mixture on low speed.
  • Stir in the bittersweet chocolate chunks.

Chilling

  • Scoop out mounds of cookie dough, approximately 3 1/2 ounces each, and place them on a parchment-lined baking sheet.
  • Cover the dough and refrigerate for at least 24 hours.

Baking

  • Preheat your oven to 350°F (175°C).
  • Bake the cookies for 18-20 minutes until golden brown on the edges and soft in the center.
  • Allow them to cool on the baking sheet for ten minutes before transferring to a wire rack.
  • Optionally, coat the bottoms with melted dark chocolate and let it set before serving.

Notes

For best results, use high-quality chocolate. Store cookies in an airtight container with a slice of bread to maintain moisture.
