  • 2 pieces bell peppers (any color)
  • 2 pieces jalapeños adjust according to spice tolerance
  • 3 cloves garlic minced
  • 1 medium onion finely chopped
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Preparation

  • Chop the onion and garlic finely, and slice the bell peppers and jalapeños.

Cooking

  • Heat two tablespoons of olive oil in a skillet over medium heat.
  • Add the chopped onions and minced garlic. Sauté until fragrant and onions turn translucent, about 3 to 4 minutes.
  • Introduce the sliced bell peppers and jalapeños to the skillet. Stir well and allow to soften for about 5 to 7 minutes.
  • Season the chicken breasts with salt and pepper, then place them in the skillet. Cook for about 6 to 8 minutes on each side, or until no longer pink and juices run clear.
  • Remove the skillet from heat and serve hot.

Notes

Serve with rice, tortillas, or a salad for a complete meal. Allowing chicken to rest after cooking helps to keep it juicy.
