  • 1 cup unsalted butter, softened Ensure it's softened to the right consistency.
  • 1 cup granulated sugar
  • 2 large egg yolks
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour Gluten-free substitute is a 1:1 blend.
  • 1/4 teaspoon salt

Jam Filling

  • 1 cup fruit jam (your choice of flavor) Popular choices include raspberry, apricot, and strawberry.

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Add the egg yolks and vanilla extract to the mixture, beating well to combine.
  • Gradually mix in the flour and salt until well blended and a dough forms.

Baking

  • Scoop tablespoon-sized balls of dough and roll them into smooth balls.
  • Place them on the prepared baking sheet, spacing them about two inches apart.
  • Using your thumb or the back of a spoon, create an indentation in the center of each dough ball.
  • Fill each indentation with about a teaspoon of jam.
  • Bake for 12-15 minutes, or until the edges of the cookies begin to turn golden brown.
  • Remove from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

For extra elegance, dust the cookies lightly with powdered sugar before serving. They can be served alone, with beverages, or alongside ice cream.
