Ingredients
  

Main Ingredients

  • 24 slices pepperoni
  • 1 cup shredded mozzarella cheese High-quality, freshly shredded preferred
  • 1/4 cup grated parmesan cheese
  • 1/2 teaspoon Italian seasoning Optional, for added flavor
  • 2 tablespoons low sugar pizza sauce Optional, for serving
  • as needed spray cooking spray or olive oil For greasing the muffin pan

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Grease a mini muffin pan with cooking spray or olive oil.
  • Place one slice of pepperoni into each muffin cup to form a base.
  • In a mixing bowl, combine shredded mozzarella and grated parmesan cheese. If desired, add Italian seasoning.
  • Spoon cheese mixture on top of each pepperoni slice, adjusting according to cheese preference.
  • If using, add a small dot of pizza sauce on each bite.

Baking

  • Bake in the preheated oven for 10 to 12 minutes or until cheese is bubbly and golden.
  • Allow to cool for 5 minutes before gently removing from the muffin pan.

Notes

Serve warm or at room temperature. Best enjoyed with a side of dipping sauce, if desired. Store leftovers in an airtight container for up to three days. Reheat in the oven for best texture.
