  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tablespoons key lime juice Freshly squeezed for best flavor

  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, cream the softened butter and granulated sugar together using an electric mixer until light and fluffy, about 2-3 minutes.
  • Add the egg, key lime juice, and key lime zest to the butter-sugar mixture and beat until thoroughly combined.
  • In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt. Gradually add to the wet mixture, mixing on low speed until just combined.
  • Drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Baking

  • Bake in the preheated oven for 10-12 minutes or until the edges start to turn lightly golden.
  • Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Serving

  • Sprinkle powdered sugar over the cooled cookies for a sweet finish if desired.

Notes

For better flavor, use fresh key limes. Chill the dough for 30 minutes before baking for better shape. Avoid overbaking to prevent dryness.
