Ingredients
  

For the Bar Base

  • 2 1/4 cups all-purpose flour Spoon into measuring cup and level off.
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup butter, softened Use room temperature.
  • 3/4 cup sugar
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs Add at room temperature.
  • 2 cups semi-sweet chocolate chips

For the Caramel Sauce

  • 5 ounces evaporated milk
  • 1 bag caramels (14 oz)
  • 1/2 cup peanut butter

Preparation

  • Preheat your oven to 375°F (190°C) and grease a 9x13-inch pan.
  • In a small bowl, combine the flour, baking soda, and salt.
  • In a large bowl, beat together the softened butter, sugar, brown sugar, and vanilla extract until creamy.
  • Add the eggs to the butter mixture one at a time, mixing well after each addition.
  • Gradually mix in the dry ingredients until just combined. Be careful not to over-mix.
  • Stir in the semi-sweet chocolate chips.
  • Spread half of the cookie dough into the prepared pan and bake for 8-10 minutes.

Making the Caramel Sauce

  • In a double boiler, melt the caramels with the evaporated milk until smooth.
  • Fold in the peanut butter until well combined.

Assembly

  • Once the base layer is set, pour the caramel sauce over it.
  • Drop spoonfuls of the remaining dough over the caramel layer and spread gently.
  • Return to the oven and bake for an additional 15-20 minutes until golden.
  • Cool completely in the pan before cutting into squares.

Notes

Serve warm with vanilla ice cream or extra caramel sauce. Sprinkle with sea salt for an elevated flavor.
