Korean BBQ Meatballs

Ingredients
  

For the Meatballs

  • 1 pound ground beef You can replace with ground chicken or turkey.
  • 1/2 cup breadcrumbs Use plain or seasoned breadcrumbs.
  • 1/4 cup green onions, chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • to taste Salt and pepper Add to personal preference.

For the BBQ Sauce

  • 1/2 cup soy sauce
  • 1/4 cup honey or maple syrup Can adjust sweetness to taste.
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon grated ginger
  • 1 tablespoon sesame seeds For garnishing.

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, combine ground beef, breadcrumbs, green onions, garlic, egg, and a generous pinch of salt and pepper. Mix until well combined.
  • Form the mixture into golf ball-sized meatballs and place on a baking sheet lined with parchment paper.

Cooking

  • Bake the meatballs in the preheated oven for 20 to 25 minutes, or until cooked through and golden brown.
  • While the meatballs are baking, prepare the BBQ sauce by combining soy sauce, honey, rice vinegar, sesame oil, ginger, and sesame seeds in a saucepan over medium heat. Stir and bring to a simmer. Cook for 5 minutes until slightly thickened.
  • Once cooked, remove the meatballs from the oven and toss them in the BBQ sauce to coat generously.

Serving

  • Serve the meatballs over rice or noodles and drizzle with any remaining BBQ sauce. Garnish with additional sesame seeds and chopped green onions.

Notes

You can freeze leftovers for up to 3 months. Thaw and reheat in the oven for a quick meal.
