  • 1 lb chicken breast, diced
  • 3 tablespoons soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 2 tablespoons vegetable oil

Vegetables and Garnish

  • 1 bell pepper, diced
  • 1 cup snap peas
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1/4 cup peanuts For garnish

Preparation

  • Cook the noodles according to the package instructions. Drain and set them aside.
  • Heat the vegetable oil in a large skillet over medium-high heat.
  • Add the diced chicken and cook for about 5-7 minutes until browned completely.
  • Incorporate the diced bell pepper, snap peas, minced garlic, and ginger. Stir-fry for 3-4 minutes.

Sauce Mixing

  • In a separate bowl, whisk together soy sauce, hoisin sauce, and rice vinegar.
  • Pour the sauce over the chicken and vegetables in the skillet and let it cook for another couple of minutes.

Final Assembly

  • Add the cooked noodles to the skillet and toss everything together until mixed well.
  • Garnish with peanuts and finely chopped green onions before serving.

Notes

Serve immediately while hot. Pairs well with steamed vegetables or an Asian-inspired salad. Can customize spice level as desired.
