Laura Bush's Cowboy Cookies

Ingredients
Wet Ingredients
- 1 cup unsalted butter, softened Ensure butter is at room temperature.
- 1 cup brown sugar, packed
- 1 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
Dry Ingredients
- 2 cups all-purpose flour Fluff flour before measuring.
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 cups old-fashioned oats
Mix-Ins
- 1 cup semisweet chocolate chips Use high-quality chocolate for best flavor.
- 1 cup chopped pecans or walnuts Optional to toast nuts for extra flavor.
- 1 cup shredded coconut Optional ingredient.
Instructions
Preparation
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 3 to 5 minutes).
- Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract until well combined.
- In another bowl, whisk together the all-purpose flour, baking soda, and salt.
- Gradually add the dry ingredients into the wet mixture, stirring until just blended.
- Mix in the old-fashioned oats, chocolate chips, chopped nuts, and shredded coconut if using.
- Scoop tablespoon-sized portions of the dough onto the prepared baking sheets, spacing them about 2 inches apart.
Baking
- Bake for 10-12 minutes or until the edges turn golden brown. The centers may look slightly underbaked.
- Remove the cookies from the oven and let them cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
Notes
Cookies can be served warm and are perfect with a glass of milk. Store in an airtight container for up to a week or freeze for up to three months. Variations available including using different types of flour and chocolate.
