  • 1 cup orzo pasta Cook according to package instructions.
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots) Feel free to customize with seasonal vegetables.
  • 2 tablespoons olive oil For sautéing.
  • 2 cloves garlic, minced Add more for stronger flavor.
  • 1 lemon juiced and zested Fresh lemon adds the best flavor.
  • Salt and pepper to taste Season as preferred.
  • Fresh parsley for garnish Adds color and flavor.

Preparation

  • Cook the orzo according to the package instructions (typically 8-10 minutes) until al dente. Drain and set aside.
  • Heat olive oil in a large skillet over medium heat.
  • Add minced garlic and sauté for about 30 seconds until fragrant, without burning.
  • Add sliced chicken breast to the skillet, cooking until no longer pink (about 5-7 minutes). Season with salt and pepper.
  • Stir in mixed vegetables and cook for 4-5 minutes until tender but still crunchy.
  • Add the drained orzo, lemon juice, and lemon zest to the skillet and toss to combine.
  • Adjust seasoning with additional salt and pepper as needed.
  • Serve warm, garnished with fresh parsley.

Notes

For best results, use fresh ingredients. Customize vegetables based on what you have. Can freeze leftovers for up to 2 months.
