For the Cod

  • 4 fillets cod fillets (approximately 6 ounces each) Choose fresh cod for best flavor.

  • 1 teaspoon garlic powder For seasoning.

For the Lemon-Dill Sauce

  • 1/3 cup plain Greek yogurt or sour cream Creamy base for the sauce.
  • 2 tablespoons mayonnaise Optional, for a creamier sauce.
  • 1 tablespoon fresh dill, finely chopped Or 1 teaspoon dried dill.
  • 1 tablespoon freshly squeezed lemon juice Adds brightness to the sauce.
  • 1 teaspoon grated lemon zest For added lemon flavor.
  • 1 teaspoon Dijon mustard Adds tanginess.
  • 1 small clove garlic, minced Optional, for extra flavor.
  • Salt, to taste For seasoning.
  • Freshly ground black pepper, to taste For seasoning.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Place the cod fillets on the prepared baking sheet.
  • Drizzle olive oil over the cod and season with salt, black pepper, garlic powder, and paprika.
  • Massage the seasoning into the fish for maximum flavor.

Baking

  • Bake the cod in the preheated oven for 12 to 15 minutes, or until it flakes easily with a fork.

Making the Sauce

  • In a mixing bowl, combine Greek yogurt or sour cream, mayonnaise (if using), dill, lemon juice, lemon zest, Dijon mustard, and minced garlic (if using).
  • Season with salt and black pepper to taste, and stir until well blended and smooth.

Serving

  • Remove the cod from the oven, spoon the lemon-dill sauce over each fillet, and garnish with lemon slices.
  • Serve hot, paired with a light salad or steamed vegetables.

Notes

For the best flavor, choose fresh cod fillets. If using frozen, ensure they are fully thawed. Adjust seasoning to taste and consider adding vegetables or using different types of fish for variation.
