  • 4 oz feta cheese, crumbled Add to the hot potatoes.

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large mixing bowl, add the cubed potatoes.
  • Drizzle in the olive oil and lemon juice, then sprinkle the dried oregano, salt, and pepper.
  • Toss the mixture until the potatoes are well-coated.

Cooking

  • Prepare a baking sheet by lining it with parchment paper or greasing it lightly.
  • Spread the seasoned potatoes in a single layer on the baking sheet.
  • Roast the potatoes for about 25-30 minutes, stirring halfway through.
  • Once fork-tender and golden, remove from the oven.
  • Immediately sprinkle crumbled feta over the hot potatoes.
  • Garnish with chopped parsley before serving.

Notes

This dish can be served warm on its own or alongside grilled meats or salads. You can customize the flavors with additional lemon juice or seasonings before serving.
