For the Kabobs

  • 3 pounds chicken breast, cut into 1-inch cubes Use fresh chicken for better texture and flavor.
  • 1 whole lemon, zested and juiced Zest carefully to avoid the bitter white pith.
  • 1 tablespoon olive oil Used to help meld flavors in marinade.
  • 1 tablespoon minced garlic Adds aromatic flavor.
  • 1 teaspoon Italian seasoning Enhances the overall flavor profile.
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions
 

Preparation

  • Cut the chicken breasts into 1-inch cubes and set aside in a bowl.
  • Zest the lemon carefully to avoid the bitter white pith, then juice it into a bowl.
  • In a large Ziploc bag, combine olive oil, minced garlic, Italian seasoning, salt, pepper, lemon zest, and lemon juice.
  • Add the cubed chicken to the marinade bag, seal it tightly and shake to coat evenly. Refrigerate for at least one hour.
  • If using wooden skewers, soak them in water for about 30 minutes before grilling.

Grilling

  • Skewer the marinated chicken pieces, leaving 2 inches of space on both ends.
  • Preheat the grill to 350°F and place the chicken skewers on the grill.
  • Cook for about three minutes on each side, ensuring the chicken reaches an internal temperature of 165°F.
  • Remove from the grill and allow to rest for a few minutes before serving.

Notes

For variations, consider adding bell peppers, zucchini, or cherry tomatoes to the skewers. Serve with fresh garden salad or over a bed of rice or quinoa.
