For the chicken

Preparation

  • In a large mixing bowl, whisk together the lemon juice, soy sauce, olive oil, minced ginger, minced garlic, parsley, kosher salt, and black pepper.
  • Place the chicken in a sealable plastic bag or a bowl and pour the marinade over the chicken, ensuring it is evenly coated.
  • Seal or cover the container and refrigerate the chicken for at least 2 hours or up to 12 hours.

Grilling

  • Preheat your grill to medium-high heat.
  • Remove the chicken from the marinade and shake off any excess liquid. Pat the chicken dry with paper towels.
  • Grill the chicken, turning occasionally, until it registers an internal temperature of 165°F.
  • Let the chicken rest for a few minutes before serving.
