  • 1 cup unsalted butter, softened Make sure butter is softened but not melted.
  • 2 cups powdered sugar, divided 1 cup for creaming, rest for rolling.
  • 1/4 cup cornstarch To help create a tender texture.
  • 1/4 cup all-purpose flour Standard flour for structure.
  • 2 tablespoons fresh lemon juice Use fresh juice for best flavor.
  • Zest of 1 lemon Adds vibrant citrus flavor.
  • 1/2 teaspoon vanilla extract Enhances overall flavor.
  • Pinch salt Balances sweetness.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream together the softened butter and 1 cup of powdered sugar until light and fluffy (about 3-5 minutes).
  • Mix in the fresh lemon juice, lemon zest, vanilla extract, and a pinch of salt until well combined.
  • Gradually add the cornstarch and all-purpose flour, stirring until just combined to avoid overmixing.
  • Using a spoon or cookie scoop, drop rounded tablespoons of dough onto a baking sheet lined with parchment paper, leaving space between each scoop.

Baking

  • Bake for 10-12 minutes, or until the edges are set but not browned. Keep an eye on them to ensure they remain pale.
  • Remove from the oven and allow to cool on the tray for a couple of minutes.
  • While still warm, roll cookies in remaining powdered sugar for a sweet finish.

Notes

Cookies can be stored in an airtight container for up to a week at room temperature or up to 2 weeks in the refrigerator. They can also be frozen for up to three months. Layer with parchment in a freezer-safe bag to prevent sticking.
