  • 3 tablespoons butter For melting
  • 10 oz package marshmallows or 4 cups miniature marshmallows Use whichever you have on hand
  • 1 teaspoon lemon zest Freshly grated for best flavor
  • 3 tablespoons lemon juice Freshly squeezed is preferable
  • 6 cups Rice Krispies cereal Main body of the treat
  • 1/4 teaspoon salt Enhances flavor
  • optional extra lemon zest for garnish For serving

Preparation

  • Gather all ingredients to set yourself up for success.
  • In a large saucepan, melt the butter over low heat, stirring occasionally to prevent browning.
  • Once the butter is melted, add the marshmallows and stir until completely melted and smooth.
  • Remove from heat and stir in the lemon zest and lemon juice, mixing well.
  • In a large bowl, combine the Rice Krispies and salt, then pour the melted marshmallow mixture over them.
  • Use a spatula or wooden spoon to gently mix until the cereal is evenly coated.
  • Grease a 9x13 inch baking dish and transfer the mixture into the dish, pressing it down firmly.
  • Let cool completely at room temperature for about 30 minutes before cutting into squares or rectangles.
  • If desired, sprinkle extra lemon zest on top for garnish.

Notes

For best results, use fresh lemon ingredients. You can customize these treats with additional flavors or toppings as desired.
