For the cookie dough

  • 1 cup granulated sugar

  • 2 tablespoons fresh lemon juice Freshly squeezed recommended.
  • 1 egg Should be at room temperature.
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

For coating

  • 1/4 cup sparkling sugar For a decorative finish.

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream together softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  • Mix in lemon zest, lemon juice, and egg until smooth.
  • In a separate bowl, whisk together all-purpose flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
  • Form the dough into small balls, about the size of a tablespoon, and roll each in sparkling sugar.
  • Place the balls on the prepared baking sheet, leaving space between each cookie.

Baking

  • Bake for 10-12 minutes until the edges are lightly golden brown.
  • Remove cookies from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to a week or freeze for up to two months. Consider using fresh herbs or making a lemon glaze for variations.
