  • 2 1/4 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1 cup unsalted butter (softened) Ensure butter is at room temperature
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon salt

Filling and Dusting

  • 1/2 cup strawberry jam You can substitute with other jams if desired
  • Powdered sugar for dusting Dust before serving

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, cream the softened butter and powdered sugar together until light and fluffy.
  • Mix in the vanilla and almond extracts.
  • Gradually incorporate the all-purpose flour and salt until a soft dough forms.
  • Roll out the dough on a floured surface to about 1/8 inch thickness.
  • Use a cookie cutter to cut shapes from the dough, ensuring half have a window shape cut out.
  • Arrange the cookies on a baking sheet lined with parchment paper and bake for 10-12 minutes, until lightly golden.
  • Allow cookies to cool completely on a wire rack.

Assembly

  • Spread a layer of strawberry jam on the flat side of whole cookies and top with cut-out cookies.
  • Dust with powdered sugar before serving.

Notes

Cookies can be stored in an airtight container at room temperature for up to a week. For longevity, refrigerate them or freeze unbaked dough.
