Cookie Dough Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1 teaspoon ground cinnamon
  • 1 cup unsalted butter, softened Use high-quality butter for best results.
  • 1/2 cup ground almonds Almond flour can be used for a finer texture.
  • 1 teaspoon vanilla extract Use pure vanilla for better flavor.
  • 1/2 cup fruit preserves (your choice) Traditional choices are raspberry or apricot.
  • 1 pinch salt

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, cream the softened butter and powdered sugar together until light and fluffy.
  • Stir in the vanilla extract.
  • In a separate bowl, combine the flour, ground almonds, ground cinnamon, and salt.
  • Gradually add the dry mixture to the creamed mixture and mix until just combined without overmixing.
  • Wrap the dough in plastic wrap and chill in the refrigerator for about 30 minutes.

Baking

  • After chilling, roll the dough out to about 1/8 inch thick on a floured surface.
  • Cut shapes using cookie cutters, making holes in half for the signature look.
  • Place on a parchment-lined baking sheet and bake for 10 to 12 minutes until lightly golden.
  • Cool on a wire rack.

Assembling

  • Spread fruit preserves on the solid cookies and place the cut-out cookies on top.
  • Dust with powdered sugar just before serving.

Notes

Store in an airtight container at room temperature for up to a week, or refrigerate for up to two weeks. For longer storage, freeze lined in parchment paper for up to three months.
