  • 2 large large firm, ripe bananas About 240g total
  • 2-3 tablespoons natural creamy peanut butter Unsweetened
  • 2 tablespoons roasted unsalted peanuts Roughly chopped
  • 1/4 cup dark chocolate chips 70% cacao or higher
  • 1 teaspoon coconut oil
  • Sea salt flakes Optional
  • Optional add-ins Mini pretzel pieces, shredded coconut, chopped dates

Preparation

  • Peel the bananas and slice them into generous coins, each approximately 1/2 inch thick.
  • Arrange the banana slices in a single layer on a parchment-lined baking sheet, ensuring they don’t touch.
  • Freeze the banana slices for about 15-20 minutes until they become firm.

Assembly

  • Remove the bananas from the freezer and spread about 1/2 teaspoon of peanut butter over each slice.
  • Sprinkle each slice with chopped peanuts and optional sea salt.

Chocolate Coating

  • In a microwave-safe bowl, combine dark chocolate chips and coconut oil. Microwave in 15-second intervals, stirring until melted and smooth.
  • Drizzle the melted chocolate over each banana bite or dip the tops for a thicker coating.
  • Return the tray to the freezer and let set for 30-60 minutes until chocolate hardens and bananas freeze solid.
  • Allow the bites to sit at room temperature for about 5 minutes before serving.

Notes

For storage, freeze completely on the tray, then transfer to a freezer-safe container or zip-top bag. They will stay fresh for up to one month.
