  • 2 cups fresh broccoli florets Steamed and chopped
  • 1 cup shredded cheddar cheese Can experiment with different cheese varieties
  • 2 large eggs
  • 1/2 cup almond flour Ensure the mixture holds together but is not too sticky
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper, lightly spraying it with cooking spray.
  • Steam the broccoli florets until tender for about 5 to 7 minutes, then chop finely.
  • In a large bowl, combine the chopped broccoli, shredded cheese, eggs, and almond flour. Mix until well combined.
  • Add garlic powder, onion powder, salt, and black pepper, stirring everything thoroughly.

Formation and Baking

  • Shape about 2 tablespoons of the mixture into small round patties and place them on the prepared baking sheet, spacing them about 1 inch apart.
  • Bake in the preheated oven for 15 to 18 minutes or until golden brown and the cheese has melted.
  • Allow the rounds to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store rounds in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. Consider adding jalapeños for spice or fresh herbs for flavor variations.
