  • 2 pieces boneless, skinless chicken breasts Choose high-quality, fresh chicken for best flavor.
  • 1 tablespoon olive oil For cooking the chicken.
  • 3 cloves garlic, minced Adds flavor to the dish.
  • 1 cup heavy cream Base of the creamy sauce.
  • 1 cup spinach, chopped Can be fresh or frozen.
  • 1/2 cup sun-dried tomatoes, chopped Provides richness to the sauce.
  • 1/2 teaspoon Italian seasoning For seasoning the sauce.
  • to taste Salt and pepper Used for seasoning the chicken.

Preparation

  • Pat the chicken breasts dry and season generously with salt and pepper on both sides.

Cooking

  • Heat olive oil in a medium-sized skillet over medium heat.
  • Add the seasoned chicken breasts and cook for 6-7 minutes on each side until golden brown and cooked through.
  • Remove the chicken from the skillet and set aside.
  • In the same skillet, sauté minced garlic for 30 seconds to 1 minute until fragrant.
  • Pour in heavy cream and stir until it simmers. Add chopped spinach and sun-dried tomatoes and stir until the spinach wilts.
  • Sprinkle Italian seasoning into the sauce.
  • Return the chicken to the skillet and coat well with the sauce. Let it simmer for an additional 2-3 minutes.

Serving

  • Serve the creamy Tuscan chicken on plates and top with freshly grated Parmesan cheese.

Notes

For variations, consider using shrimp or making it meatless with more veggies. Adjust the creaminess to your taste.
