  • 1/2 cup grated Parmesan cheese
  • 1/4 cup butter Unsalted preferred.
  • 1/4 cup all-purpose flour For making roux.
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • to taste Salt and pepper Adjust according to preference.

Preparation

  • Cook the elbow macaroni according to the package instructions, then drain and set aside.
  • Melt the butter in a large pot over medium heat until bubbling.
  • Add the flour, garlic powder, onion powder, salt, and pepper to the melted butter. Stir well to create a roux and cook for 1-2 minutes until smooth and slightly bubbly.
  • Gradually whisk in the chicken or vegetable broth, ensuring to avoid lumps. Increase the heat slightly and bring the mixture to a simmer to thicken.
  • Stir in the heavy cream followed by the shredded cheeses until creamy and well combined.
  • Add the cooked macaroni to the cheese soup and stir gently until well coated.
  • Ladle the soup into bowls and garnish with chopped green onions. Serve hot.
