  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell pepper, chopped Any color
  • 1/2 cup red onion, thinly sliced
  • 1 cup shredded carrots
  • 1/2 cup feta cheese, crumbled Feel free to adjust to taste

Dressing Ingredients

  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar

Instructions
 

Preparation

  • Gather all fresh ingredients.
  • In a large bowl, combine the mixed greens, halved cherry tomatoes, diced cucumber, chopped bell pepper, thinly sliced red onion, shredded carrots, and crumbled feta cheese. Toss well.

Making the Dressing

  • In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper until well blended.

Combining

  • Pour the dressing over the salad mixture in the large bowl. Gently toss everything together to ensure the dressing coats all ingredients.
  • Cover with plastic wrap or transfer to an airtight container and refrigerate for at least two hours.

Serving

  • Serve in a large bowl or portion into individual serving bowls. Add extra toppings like nuts or seeds if desired.

Keep the dressing separate until ready to serve for maximum freshness. Try to prepare vegetables a day in advance for best results.
