For the Cake

  • 1 box yellow cake mix Conveniently packaged mix.
  • 1 can mandarin oranges, drained (11 ounces) Fresh mandarin oranges can be used for better flavor.
  • 1 cup vegetable oil
  • 4 large eggs Use room temperature eggs for better mixing.

For the Topping

  • 1 can whipped topping (8 ounces) For a creamy contrast.
  • 1 package instant vanilla pudding mix (3.4 ounces)
  • 1 cup milk Use room temperature milk for best results.
  • optional additional mandarin oranges for garnish Adds color and flavor.

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease and flour your 9x13 inch baking pan.
  • In a large mixing bowl, combine the yellow cake mix, drained mandarin oranges, vegetable oil, and eggs. Beat on medium speed for about 2 minutes.
  • Pour the batter into the prepared baking pan and spread it evenly.

Baking and Cooling

  • Bake in the preheated oven for 30-35 minutes. Check for doneness with a toothpick.
  • Allow the cake to cool completely in the pan.

Topping Preparation

  • In a separate bowl, mix the whipped topping, instant vanilla pudding mix, and milk until smooth.
  • Spread the topping evenly over the cooled cake.
  • Garnish with additional mandarin oranges, if desired.

Serving

  • Slice and serve the Mandarin Orange Cake to friends and family.

Notes

Store leftover cake in the refrigerator for up to 3-5 days. Allow to chill in the refrigerator after adding the topping for better texture.
