Ingredients
  

For the salad

  • 1 package mandarin orange Jello
  • 1 cup cottage cheese Use high-quality cottage cheese for the best flavor.
  • 1 cup crushed pineapple, drained Make sure to drain well to avoid excess liquid.
  • 1 cup Cool Whip Use for creaminess.
  • to taste Chopped nuts (optional) Pecans or walnuts are popular choices.

Preparation

  • Boil water as directed on the Jello package. Once boiling, add the Jello powder and stir until it fully dissolves.
  • Allow the Jello to cool at room temperature for about 10 to 15 minutes.
  • In a mixing bowl, combine the cottage cheese, crushed pineapple, and Cool Whip. Mix until smooth.
  • Gently fold the cooled Jello mixture into the cottage cheese mixture, being careful not to overmix.
  • Transfer the mixture to a serving dish and cover it with plastic wrap. Refrigerate for at least 2 hours to set.
  • Before serving, sprinkle chopped nuts on top for added crunch if desired. Serve and enjoy!

Notes

For best results, allow the salad to chill longer in the fridge to enhance flavor melding. You can add different fruits or flavors of Jello for variations.
