Ingredients
  

Salad Base

  • 4 cups mixed greens (spinach, arugula, or your choice) Ensure greens are fresh and not wilted.
  • 1 can mandarin oranges, drained
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup sliced almonds or walnuts Toasting nuts enhances flavor.
  • 1/2 cup crumbled feta cheese (optional) Use high-quality feta for best taste.

Dressing

  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or maple syrup (optional) Add for extra sweetness.
  • to taste Salt and pepper Adjust according to preference.

Preparation

  • Rinse mixed greens under cold water and dry thoroughly.
  • In a large salad bowl, combine mixed greens, drained mandarin oranges, sliced red onion, and nuts.
  • If desired, add crumbled feta cheese atop the salad.

Dressing

  • In a separate bowl, whisk together olive oil, apple cider vinegar, and honey or maple syrup if using.
  • Add a pinch of salt and pepper and mix well.

Assembly

  • Drizzle the dressing over the salad and toss gently to combine.
  • Serve immediately or refrigerate briefly to let flavors meld.

Notes

Store leftovers in an airtight container without dressing for up to 2 days. Add dressing just before serving.
