  • 1 tablespoon ginger, minced

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  • Add the sliced chicken breasts to the skillet and cook for about 5-7 minutes, stirring occasionally, until browned and fully cooked.
  • Add minced garlic and ginger, cooking for an additional minute until fragrant.
  • Stir in the sliced bell pepper and red onion, cooking for about 3-4 minutes until the vegetables are slightly tender.
  • Add the diced ripe mango and soy sauce, stirring gently to coat all the ingredients.
  • Cook for an additional 2-3 minutes until the mango softens slightly. Season with salt and pepper to taste.
  • Serve hot, garnished with chopped cilantro.

Notes

To serve, consider placing the stir fry over jasmine rice, quinoa, or fresh greens. Lime wedges enhance the dish's flavors. For extra texture, add roasted nuts.
