Ingredients
  

For the Chicken

  • 2 pieces boneless chicken breasts
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste

For the Mango Salsa

  • 1 piece ripe mango, diced
  • 1/2 cup red onion, finely chopped
  • 1 piece red bell pepper, diced
  • 1 piece jalapeño, minced (optional)
  • 1/4 cup fresh cilantro, chopped
  • 1 piece juice of 1 lime
  • Salt and pepper, to taste

Instructions
 

Preparation

  • Preheat the grill to medium-high heat.
  • Pat the boneless chicken breasts dry with a paper towel and season with salt and pepper.
  • Drizzle olive oil over the chicken breasts and massage to coat.

Grilling

  • Place the chicken on the grill and cook for 6-7 minutes on each side until fully cooked (165°F internal temperature).
  • Remove the chicken from the grill and let it rest for a few minutes.

Making the Salsa

  • In a medium bowl, combine diced mango, red onion, red bell pepper, jalapeño (if using), and cilantro.
  • Squeeze lime juice over the mixture, season with salt and pepper, and stir gently to combine.

Serving

  • Slice the grilled chicken into strips and top each portion with mango salsa before serving.
  • Consider serving with tortillas, rice, or salad for a complete meal.

Notes

For added flavor, consider marinating the chicken in lime juice, olive oil, and spices for 30 minutes before grilling.
