Ingredients
  

For the dough

  • 2 cups all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 tablespoon active dry yeast
  • 3/4 cup warm water
  • 1 tablespoon maple syrup
  • 1 teaspoon cinnamon
  • 1 egg for egg wash

Dough Preparation

  • Mix warm water with sugar and active dry yeast in a medium-sized bowl. Let it sit for about 5-10 minutes until frothy.
  • In a large bowl, combine all-purpose flour, salt, and cinnamon. Stir to mix well.
  • Add the yeast mixture and maple syrup to the dry ingredients. Mix until it forms a dough.
  • Knead the dough on a floured surface for 5-7 minutes until smooth and elastic.
  • Place the dough in a greased bowl, cover with a towel, and let it rise for 1 to 1.5 hours, or until doubled in size.
  • Punch down the dough, divide into equal pieces, and shape each into a bagel by forming a ball and poking a hole in the center.
  • Let the bagels rest for 30 minutes while preheating the oven to 375°F (190°C).

Cooking

  • Bring a large pot of water to a boil. Optionally add sugar or baking soda.
  • Carefully drop bagels into the boiling water, boiling for 1-2 minutes on each side.
  • Transfer the boiled bagels to a parchment-lined baking sheet and brush the tops with egg wash.
  • Bake for 20-25 minutes until golden brown and hollow when tapped.
  • Allow to cool on a wire rack before serving.

Notes

Store cooled bagels in an airtight container for up to 2 days. For longer storage, freeze in plastic wrap and a freezer-safe bag for up to 3 months.
