Pasta and Cream Ingredients

  • 8 ounces uncooked shell pasta
  • 1 cup heavy cream For creaminess
  • 2 cups cooked chicken, shredded Use rotisserie or leftover chicken
  • 2 cups fresh spinach leaves Can substitute with kale or Swiss chard
  • 1/4 cup grated parmesan cheese For garnish
  • 1/4 cup freshly chopped basil leaves For garnish

Seasoning

Instructions
 

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the diced onions and minced garlic, sauté for about 5-6 minutes until they soften and become fragrant.

Cooking

  • Pour in the chicken stock and stir in the tomato paste, sun-dried tomatoes, Italian seasoning, and red pepper flakes.
  • Bring this mixture to a rolling boil.
  • Add the uncooked shell pasta and reduce heat to let it simmer for about 10 minutes.
  • Stir in the heavy cream, shredded chicken, and fresh spinach leaves.
  • Continue to cook until the spinach wilts and the pasta is al dente.

Finishing Touches

  • Remove from heat and stir in the grated parmesan cheese and freshly chopped basil leaves.
  • Season with salt and black pepper to taste.
